Who we are
The Ceviche Experience began in 2025 with a simple idea from Chef Jose Montan: bring people together through good food, shared stories, and hands-on learning.
His journey into this work started years earlier while living in Chile, where he co-founded a Peruvian-Japanese fusion restaurant with his brother. During that time, he explored the vibrant flavours of Nikkei cuisine and developed a deep appreciation for the balance of fresh ingredients, technique, and cultural tradition.
After moving to Canada just before 2019, Chef Jose brought those experiences with him. Now based in Edmonton, he created The Ceviche Experience as a way to share the flavours and cooking styles that shaped his journey, while building a space that feels welcoming, relaxed, and inspiring.
Working alongside local suppliers and creative partners, he continues to grow The Ceviche Experience through thoughtful events and menus that celebrate culture, seasonality, and community.
